Onion  

A spicy spinach dish made with onion and chillies

Ingredients
Spinach leaves, fresh or frozen

Kalwanji (onion seeds)
1/4 teaspoon

1/4 teaspoon

Method
Wash the spinach leaves and chop them into small pieces. Wash them thoroughly if they are fresh. Frozen spinach can be used straight from the pack.

Place a frying pan on the cooker at medium heat. Add the oil.

When the oil is hot, place the onion seeds in the oil. Place all the dry chillies in the oil as well. Fry this for a few seconds.

Chop the onions into small pieces and then fry in the same pan until brown in colour. Add the chopped spinach into the oil. Then add green chillies and salt and fry all of this together.

The spinach should be dried until the excess water has dried.

Palan shaag is best served with plain rice as a starter.
