  Prawns
Prawns Curry

Turmeric  

Easy to make and delicious, this curry is made with prawns, onions and a masala spice mix, with the option of adding cauliflower or cucumber.


Ingredients
Prawns with or without skins (your preference)
1/2 - 1lb


Prawns Curry
Medium onion

Jeera (Cumin)
1 teaspoon
Turmeric
3 x 1/2 teaspoon
Salt
3 x 1/2 teaspoon
Chilli powder
1/2 teaspoon
Kalwanji (Onion seeds)
1/2 teaspoon

Optional Additions
Cucumber (skinned and cut into cubes)
Cauliflower (cut into small portions)


Method
Peel prawns, wash 3-4 times in running water, add ½ teaspoon turmeric, ½ teaspoon chilli powder and ½ teaspoon salt and leave for 5-10 mins. Finely chop onions, cut cauliflower into small florets and wash, then add ½ teaspoon of turmeric and ½ teaspoon of salt.

Use a medium frying pan. Pour in ½ cup of oil and heat this up. First fry cauliflower and remove from oil after 3 mins.

Add the onion seeds and fresh onions and fry until brown. Add the prawns and fry until the mixture is golden brown. In a separate bowl, make up masala mix with jeera, turmeric and salt. Add some water and mix. Place this into a frying pan.

Fry on medium heat for 3-5 mins until the oil obviously separates. Put in 1½ cups of water and bring to the boil. When this has reached boiling point, add in the already fried cauliflower and boil until gravy thickens.

This is best served with plain basmati rice.
